Nothing makes me feel more like a kid again than biting into a delicious Hostess FunnyBone.  I know, I know, it’s processed garbage you’re putting in your system, blah blah, I don’t indulge in Hostess anything very often.  Which led me to want to recreate that taste in an interesting way.  With a combination of Martha Stewart’s Devil’s Food Cupcake, an Annies-eats.com peanut butter filling recipe and a homemade Cream Cheese frosting, a marvelous creation was born.  I made enough to make the (pictured below) 2tier Cake and about a half dozen cupcakes.  Both of which came out awesome!  My next attempt may find a substitution with the Cream Cheese frosting for a Ganache topping, but that’s why I love baking, your creations are as simple or as complicated as you like.  And I’m sorry, when it comes to sweets, there’s never a “bad” combo, just different!

I am not a perfectionist with much in my life, except baking.  I will spend as many hours as it takes to find the perfect cupcake recipe to match the most complimentary frosting.  This days adventure led me to find a light and fluffy lemon cupcake to match my delicious Lemoncello butter cream frosting.  After trying several recipes, I found the following gem on Allrecipes.com.  Of coarse, being the perfectionist I am, I had to switch a few things around.  The end result; a true (non pound-cake-like)  lemon cupcake with the perfect lemoneyness (I just made a new word!)  Hopefully Paddycakes will make this for you some day.  Or, if you would like to make this yourself, shoot me an E-mail!

Gluten Free Death by Chocolate

Fabulousness on it’s way!

So I’ve been “hired” for another gathering, they’re fabulous customers.  This round is a Wedding Anniversary and the pressure is on!  Only 2 and half weeks to get everything in order and the ideas have been racing through my mind non-stop. The plan was to pin down two signature (adult) cupcake recipes (1 doz each) and a cake concept.  And the verdict is in! *Editted* It’s a surprise!  Final decoration styling is still brewing upstairs, but I’ll add pictures of my process upon completion.  I’m still in the learning process here, so bare with!  I’ll be posting again tomorrow with updates from my next Wilton fondant class AND I will finally post my recipe and pictures of my infamous coffee frappe cupcakes – this Friday I’m making the cupcakes for Jess’ birthday!

Hello world!

Welcome to my blog everyone!  I have ZERO clue what I’m doing so be gentle!  My purpose, at this point in the game, is to share my story with you all.  I’ve finally decided to start focusing all my energies on starting Paddycakes, my home-delivery bakery!  Little did I understand the undertaking of such a feat I was about to start a few months ago.  In the time since I’ve started, I’ve baked countless cupcakes, cookies, cakes and other sweet treats, attempting to perfect my recipes.  (More on that later!)  Everything from Annies-eats.com to Martha Stewart to King Arthur have been incredible resources for my research and development.  Thank you for reading and see ya’ll soon!
